Sourced from pasture-raised Wagyu cattle in South Texas, these patties are naturally rich in marbling, creating a juicy, tender bite with every cook. With no added hormones or antibiotics, these all-natural beef patties deliver the perfect balance of bold, beefy flavor and melt-in-your-mouth texture. Whether grilled, pan-seared, or smashed for a crispy edge, these Wagyu patties take burger night to the next level.
Recipe
Texas Wagyu Smash Burgers with Quick Pickles & Garlic Aioli
Serves 3 | Ready in 20 minutes
Crispy-edged, juicy-centered, and unapologetically bold—these smash burgers are a Texas take on the diner classic, showcasing the rich marbling of 100% grass-fed Wagyu.
Ingredients:
1 pack of 100% Grass-Fed Wagyu Beef Patties (3)
Salt & freshly ground black pepper
3 Burger Buns
3 slices of Cheddar or melty cheese of choice
Sliced Village Farms Tomatoes
Lettuce or arugula
Optional: thinly sliced South Tex Organics Red Onion
For the Garlic Aioli:
¼ cup mayo
1 clove garlic, grated
1 tsp lemon juice
Pinch of salt
For the Quick Pickles:
½ cup thinly sliced cucumber or radishes
¼ cup apple cider vinegar
1 tsp Keepers Harvest Raw Honey
Pinch of salt
Instructions:
Make the Quick Pickles:
In a small bowl, combine vinegar, honey, and salt. Add sliced cucumbers or radishes and let sit while you prepare the rest.
Mix the Garlic Aioli:
Stir together mayo, garlic, lemon juice, and salt. Chill until ready to use.
Smash the Patties:
Heat a cast iron skillet or griddle over high heat. Season beef patties with salt and pepper. Place in the hot skillet and smash down with a spatula. Cook 2–3 minutes per side until crispy-edged and juicy inside. Top with cheese and let melt.
Toast the Buns:
Toast buns in the pan or oven until golden.
Assemble:
Spread garlic aioli on buns, layer with lettuce, tomato, burger, pickles, and onion if using. Serve hot with fries or a crisp Lone Star Lettuce salad.
